Baked Green Mussels Recipe

(7 mussels)

1/2 lb (7 mussels) New Zealand greenshell mussels 
3 stalks scallion
1/4 cup mayonaise
2 teaspoons Sriracha
2 teaspoons  masago (tiny orange colored fish eggs)


1) Thaw and wash mussels. Pull from shells and squeeze to get rid of excess water. Cut each mussel into 6 pieces (1 cut lengthwise, 2 cuts crosswise) and put in medium sized bowl, save shells to use later.

2) Chop scallion and add to same bowl, also add mayo, Sriracha, masago
(leave a small amount of masago and scallion for garnish). Mix.

3) Scoop about a tablespoon of mixture onto each shell and lay it on baking sheet. It's okay if some shells are not used.

4) Bake at 350 F for 15 minutes.

5) Garnish baked mussels with left over masago and scallion.
