Seafood Ceviche Recipe

(serves 4)

1 filet Cod
1/2 lb large scallops (small is okay too)
1/2 lb large shrimps, deveined and peeled

1 bottle of concentrated lime juice or lots of real limes
1 clove garlic
1/2 small red onion
1 bunch cilantro
Salt
Red pepper flakes, optional
2 Roma tomatoes, optional
1 Haas avocado, optional


1) Cut each seafood into bite size and place in medium bowl. (Cut each scallop into 4 pieces, do not cut if using small scallops. Cut each shrimp into 3 pieces. Cut Cod into cubes about the same size as the scallops and shrimps.)

2) Mince garlic and add to same bowl. (Add red pepper flakes, optional.) Add enough lime juice to cover the seafood. Salt to taste. Mix. Thinly slice the onion and place on top of mixture (use more onion if you want). Do not mix onion into mixture. Cover and refrigerate 2-3 hours.

3) Remove seafood mixture from refrigerator and drain most of the liquid. Chop cilantro and add to mixture. (Add chopped tomatoes and/or avocado, optional.) Mix. Add more salt if necessary.

4) Best served in martini glass. Garnish with cilantro. Enjoy!
